Vi’s Chefs Connect, Collaborate, and Innovate at Culinary Institute of America

As part of its commitment to enhancing the mind, body, and spirit of the residents in its senior living 10 communities, Vi is embarking on an inspiring new wave of culinary experiences to cater to a new generation of seniors

Led by Director of Food and Beverage Steven Fowler, earlier this year Vi took its entire culinary team, including Executive Chefs, Executive Sous Chefs, and members of the Corporate Operations team, to the San Antonio Campus of the Culinary Institute of America. With an eye on innovation, the intention was to allow Vi’s chefs to connect, share ideas, and foster a collaborative environment. The chefs then brought what they learned back to each of their respective communities.

During the trip to Texas, everyone learned new grilling techniques and explored 35 new culinary dishes. The resulting goal, Fowler said, is to have Vi’s F&B and Living Well departments — each focused on a holistic approach to wellness — complement one another to create an overall enhanced experience and quality of life.

At Vi at Highlands Ranch, for example, Executive Chef Greg Strickland has already implemented unique and enriching programming at the Denver, CO-area community that creates a crossroads between food and innovation. For instance, Chef Strickland has introduced beehives to the property, where he uses the fresh honey for dishes, drinks, and a resident favorite: a microbrewery. The team at Vi believes that experiences such as these allow residents to explore new activities and passions, for an enhanced quality of life.
