
Innovation in the Kitchen: Kendal System Unveils Culinary and Operational Updates

The Kendal Corporation (TKC) has announced a series of updates designed to improve the dining experience and streamline operations across Kendal Affiliate partners.
The organization said the updates include modernizing dining spaces, implementing new systems and adjusting meal-plan operations. As part of this shift, many Kendal affiliates are moving toward a simplified, points-based meal plan model, the organization said.
Christian Ramsey, TKC’s Director of Culinary, says senior living dining demands efficiency and high-quality personalization. The change in the meal plan pairs well with the implementation of the Cubigo point-of-sale system, which TKC says is now fully live at all affiliates.
The Cubigo System
According to the company, the new Cubigo system combines dining and resident-engagement functions. It includes self-service kiosks that empower residents with greater independence, while also driving administrative efficiency through seamless billing integration. The company says the system also facilitates a complete “paper to digital” transition with Kitchen Display Systems, ensuring a more streamlined process.
Kitchen Renovations
Physical spaces are evolving alongside the digital ones. Kendal says several affiliates are updating kitchen facilities as part of a broader move from high-volume meal production toward cook-to-order menus and daily specials.
TKC reports that Kendal at Oberlin has opened a new kitchen, while Kendal on Hudson is renovating its main kitchen as part of a larger commons update. Planning is also underway at Collington, a Kendal affiliate, as part of an expansion project, and construction is underway at Kendal at Hanover.
Produce Sourcing Goal
Leadership means looking ahead, and TKC has set a bold goal for 2027: to source the highest-volume produce items most associated with pesticide residues from more sustainable suppliers. The organization said the effort will require additional costs and coordination with suppliers.
The company says that by reducing chemical exposure, Kendal is making a direct investment in the long-term health and well-being of every resident.
